Parte II"},"content":{"rendered":"<p>Hoy en d\u00eda, retirar el gl\u00faten de la dieta sin un diagn\u00f3stico m\u00e9dico se ha vuelto moda. Algunos gur\u00fas dicen que en la prehistoria no se com\u00edan cereales. Como has <a href=\"https:\/\/nutritionalcoaching.com\/en\/blog\/dieta-sin-gluten\/\">podido leer<\/a>, eso no es cierto y demuestra una gran ignorancia. De hecho\u00a0 diferentes antrop\u00f3logos confirman que en el sarro de restos humanos prehist\u00f3ricos, se han encontrado restos de cereales. Recuerdo una conversaci\u00f3n hace algunos a\u00f1os ya con el Dr. Enrique Roche de la Universidad de Elche, que nos confirmaba este dato.<\/p>\n<p>S\u00ed es cierto, como hemos visto, que un % de la poblaci\u00f3n es cel\u00edaca y hay pruebas diagn\u00f3sticas que lo pueden confirmar. Tambi\u00e9n existen muchas personas que se consideran sensibles al gluten en ausencia de enfermedad celiaca y siguen dietas sin gluten. El t\u00e9rmino sensibilidad al gluten no celiaca, est\u00e1 siendo utilizado para describir poblaci\u00f3n que presenta s\u00edntomas similares a los de una enfermedad celiaca, pero en los cuales no se ha descartado enfermedad celiaca o alergia al trigo, y presentan mejor\u00eda cuando se inicia una dieta sin gluten. Actualmente no se sabe de forma fiable cu\u00e1ntas personas son sensibles al gluten, y si estas personas siguen una dieta estricta sin gluten o no.<\/p>\n<h4>Algunos estudios basados en encuestas poblacionales muestran que en el Reino Unido el 13% de la poblaci\u00f3n report\u00f3 tener una sensibilidad al gluten y cerca del 4% segu\u00edan una dieta sin gluten. Lo que es cierto es que la sensibilidad al gluten no existe en ausencia de la enfermedad cel\u00edaca o eso se pensaba hace alg\u00fan tiempo.<\/h4>\n<p>Hoy en dia, <strong>existe la sensibilidad al gluten no cel\u00edaca<\/strong> (SGNC). \u00c9sta es una reacci\u00f3n al gluten u otros componentes del trigo que se caracteriza por la presencia de s\u00edntomas digestivos y extra-digestivas relacionados con la ingesta de gluten y\/o otras prote\u00ednas del trigo, en pacientes en los que se ha descartado enfermedad celiaca y alergia al trigo\/gluten. Se estima una prevalencia 10 veces superior a la EC. Menos frecuente en edad infantil. Un estudio publicado en la revista <a href=\"http:\/\/www.bmj.com\/\"><em>British Medical Journal<\/em><\/a> concluy\u00f3 que el consumo de gluten no incrementa el riesgo de padecer enfermedades cardiovasculares, como tambi\u00e9n dicen algunos. Por lo que no se recomienda este tipo de dietas para las personas que no padecen la enfermedad celiaca.<\/li>\n<li>Por otro lado, comer sin gluten sin ser celiaco no s\u00f3lo no es m\u00e1s saludable, sino que puede aumentar \u00a0el riesgo de sufrir enfermedades cardiovasculares, al producirse un mayor consumo de alimentos ricos en arroz y ma\u00edz, con el aumento de glucemia, reducci\u00f3n de fibra y fitoqu\u00edmicos\u2026 seg\u00fan investigadores de las universidades de Columbia y Harvard, en un estudio de cohorte prospectivo que analiz\u00f3 el consumo de gluten y la incidencia de enfermedades coronarias en m\u00e1s de 100.000 personas a lo largo de 26 a\u00f1os.<\/li>\n<li>En el \u00e1mbito deportivo ocurre lo mismo afirmando los supuestos beneficios de las dietas sin gluten en el peso y\/o rendimiento deportivo. Pues bien, os informo que en el deporte seg\u00fan un estudio de 2015, se demostr\u00f3 que ni el rendimiento, ni las molestias intestinales, ni los marcadores inflamatorios mostraron diferencias entre seguir una dieta individualizada equilibrada y una sin gluten. Adem\u00e1s las dietas sin gluten suponen un mayor coste econ\u00f3mico, lo cual se debe de tener en cuenta en los tiempos que corren.<\/li>\n<\/ul>\n<h4>Por todo lo expuesto en este art\u00edculo y tambi\u00e9n en base a mi experiencia en consulta, puedo afirmar que no se recomienda el uso de dietas sin gluten en personas sanas.
