Es cierto que comparadas con otros vegetales, las espinacas tienen un alto contenido en hierro, sin embargo este no se absorbe de manera muy eficaz en nuestro cuerpo.<\/p>\n<p>Si nos ponemos a comparar la capacidad de absorci\u00f3n del hierro en las espinacas con alg\u00fan tipo de carne, podremos comprobar una diferencia bastante significativa. Mientras que de un vegetal como la espinaca se puede absorber un 1,7% de su contenido en hierro, de un solomillo de vaca se podr\u00eda absorber hasta un 20%.<\/p>\n<p><img data-recalc-dims=\"1\" fetchpriority=\"high\" decoding=\"async\" class=\"wp-image-16973 aligncenter\" src=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-jacqueline-howell-2325843-1536x1024-1.jpg?resize=700%2C467&#038;ssl=1\" alt=\"\" width=\"700\" height=\"467\" srcset=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-jacqueline-howell-2325843-1536x1024-1.jpg?resize=1024%2C683&amp;ssl=1 1024w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-jacqueline-howell-2325843-1536x1024-1.jpg?resize=300%2C200&amp;ssl=1 300w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-jacqueline-howell-2325843-1536x1024-1.jpg?resize=768%2C512&amp;ssl=1 768w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-jacqueline-howell-2325843-1536x1024-1.jpg?resize=600%2C400&amp;ssl=1 600w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-jacqueline-howell-2325843-1536x1024-1.jpg?w=1536&amp;ssl=1 1536w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>Traducimos este dato: aunque la cantidad de hierro en la espinaca (2,6 mg por cada 100 g) es mayor que la del solomillo (2,5 mg por 100 g), como la capacidad de absorci\u00f3n de cada uno es diferente, finalmente la cantidad que obtendr\u00edamos del hierro de la espinaca ser\u00edan 0,044 mg y del solomillo 0,50 mg. \u00a1Ahora ya se cambiaron las tornas!<\/p>\n<p>Pero, \u00bfpor qu\u00e9 ocurre esto?. Uno de los causantes de que esto ocurra son los polifenoles presentes en las espinacas. Estos polifenoles reducen la biodisponibilidad del hierro formando complejos insolubles que no pueden ser absorbidos.<\/p>\n<p>Otro causante podr\u00edan ser los oxalatos (como se cre\u00eda anteriormente), pero al ser termol\u00e1biles, si los sometemos a proceso de cocci\u00f3n, su concentraci\u00f3n se reduce de manera en la que su interacci\u00f3n con el hierro resulta despreciable.<\/p>\n<p>Un dato interesante a a\u00f1adir es que tambi\u00e9n se est\u00e1 estudiando el titanio como un elemento beneficioso en concentraciones bajas para mejorar el rendimiento de los cultivos al estimular la actividad de ciertas enzimas. Sin embargo, si la concentraci\u00f3n de titanio es demasiado alta, podr\u00eda interferir con las funciones biol\u00f3gicas del hierro, dando como resultado toxicidad por titanio [1].<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter wp-image-16975\" src=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-lisa-1152237-1536x1024-1.jpg?resize=700%2C467&#038;ssl=1\" alt=\"\" width=\"700\" height=\"467\" srcset=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-lisa-1152237-1536x1024-1.jpg?resize=1024%2C683&amp;ssl=1 1024w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-lisa-1152237-1536x1024-1.jpg?resize=300%2C200&amp;ssl=1 300w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-lisa-1152237-1536x1024-1.jpg?resize=768%2C512&amp;ssl=1 768w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-lisa-1152237-1536x1024-1.jpg?resize=600%2C400&amp;ssl=1 600w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/05\/pexels-lisa-1152237-1536x1024-1.jpg?w=1536&amp;ssl=1 1536w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>Siguiendo en la l\u00ednea del titanio, otro estudio reciente [2] nos se\u00f1ala que las part\u00edculas de di\u00f3xido de titanio que se encuentran en el aditivo E171, que se agregan a alimentos como chicles, salsas, caramelos, aderezos para ensaladas, etc. disminuyen la biodisponibilidad del hierro entre un 5-11% en la fase oral por:<\/p>\n<ul>\n<li>Inhibici\u00f3n de la actividad de la ?-amilasa por part\u00edculas de E-171<\/li>\n<li>Uni\u00f3n del hierro a las part\u00edculas de E-171<\/li>\n<\/ul>\n<p>Por consiguiente, si no mezclamos las espinacas con este aditivo, evitaremos reducir su capacidad de absorci\u00f3n. Aunque existen m\u00e1s factores externos que interfieren en la capacidad de absorci\u00f3n del hierro (calcio, f\u00f3sforo, fibra, etc.), en este momento lo que estamos explicando es el por qu\u00e9 del famoso \u201cmito del hierro\u201d.<\/p>\n<p>Por tanto, \u00bfde d\u00f3nde sale este mito?. Este mito nace cuando un qu\u00edmico alem\u00e1n, Emin von Wolff analiza en 1870 el contenido de hierro en las espinacas llegando al <em>craso error <\/em>de equivocarse en una coma y notificar que el contenido de hierro calculado eran 40 mg por cada 100 g en vez de 4 mg por cada 100 gramos.<\/p>\n<p>Otro personaje que ayud\u00f3 a mantener este mito fue Popeye, al cual se le asoci\u00f3 el consumo de espinacas por su contenido en hierro para estar m\u00e1s fuerte, pero lo que realmente la autora quer\u00eda reflejar con las espinacas en su comic era su rico contenido en carotenoides (precursores de vitamina A).
