Pero realmente, \u00bfconocemos bien qu\u00e9 es el gluten? Hay \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 gente que piensa que el hecho de que est\u00e9 marcado expl\u00edcitamente en ciertos alimentos, es debido a que es perjudicial o incluso hay personas que piensan que \u201cengorda\u201d.<\/p><p>Existen muchas falsas creencias respecto al gluten, por tanto en este post intentaremos aclarar algunas de ellas.<\/p><p>El gluten es una <strong>glucoprote\u00edna<\/strong> (formada por 2 glucoprote\u00ednas: gliadina y glutenina) con un bajo valor nutricional\u00a0y biol\u00f3gico, esto es debido a que carece de todos los amino\u00e1cidos esenciales,\u00a0pero tiene un alto valor tecnol\u00f3gico,, es el responsable de la elasticidad de la masa de harina, confiere la consistencia y esponjosidad de los panes y masas horneadas. Podemos encontrar el gluten en cereales de consumo habitual en nuestra dieta como el trigo y otros cereales como cebada, centeno, espelta, avena o triticale (mezcla de trigo y centeno).<\/p><p><img fetchpriority=\"high\" decoding=\"async\" data-recalc-dims=\"1\" class=\"aligncenter wp-image-13153\" src=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/04\/pan.png?resize=670%2C448&#038;ssl=1\" alt=\"\" width=\"670\" height=\"448\" srcset=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/04\/pan.png?w=585&amp;ssl=1 585w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/04\/pan.png?resize=300%2C201&amp;ssl=1 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/p><p>Existen 3 enfermedades relacionadas con el gluten: <strong>celiaqu\u00eda<\/strong>, <strong>alergia al gluten\/trigo<\/strong> and <strong>sensibilidad no cel\u00edaca al gluten<\/strong>. En personas que no presentan ninguna de las patolog\u00edas anteriores el gluten no causa sintomatolog\u00eda, sobre todo si proviene de fuentes de fibra de buena calidad y no de harinas refinadas t\u00edpicas de ultraprocesados como boller\u00eda industrial, pizzas congeladas, algunas carnes preparadas (se a\u00f1ade gluten para mejorar la elasticidad y textura), ya que estos productos van acompa\u00f1ados tambi\u00e9n de cantidades significantes de sal, az\u00facares y grasas.<\/p><ul><li><p><strong>En la celiaqu\u00eda, <\/strong>existe una predisposici\u00f3n gen\u00e9tica de base y se caracteriza por una lesi\u00f3n de mucosa del intestino delgado que va atrofiando las vellosidades intestinales provocando una mala absorci\u00f3n de nutrientes, en los que incluimos el gluten. Es la enfermedad cr\u00f3nica intestinal m\u00e1s frecuente en nuestro pa\u00eds y sus s\u00edntomas se caracterizan por diarrea cr\u00f3nica, hinchaz\u00f3n abdominal, n\u00e1useas, v\u00f3mitos, anemia, estre\u00f1imiento, debilidad generalizada, dolor de cabeza, erupciones cut\u00e1neas, etc.<\/p><\/li><li><p><strong>En la alergia al gluten\/trigo,<\/strong> se produce una manifestaci\u00f3n de hipersensibilidad m\u00e1s o menos inmediata debido a una respuesta inmunol\u00f3gica. Puede provocar desde un simple sarpullido alrededor de la boca hasta reacciones m\u00e1s adversas como un choque anafil\u00e1ctico. Normalmente son manifestaciones de inicio brusco al poco tiempo de ingerir el alimento. Puede provocar: v\u00f3mitos, dolor abdominal, diarrea, asma, tos, rinitis, urticaria, edema o inflamaci\u00f3n, dermatitis at\u00f3pica,\u2026<\/p><\/li><li><p><strong>En la sensibilidad no cel\u00edaca al gluten, <\/strong>las personas tienen manifestaciones parecidas a la celiaqu\u00eda pero no existe una basa inmunol\u00f3gica; dolor abdominal, diarreas frecuentes, eccemas o erupciones en la piel, dolor de cabeza, fatiga \u2026<\/p><\/li><\/ul><p><img decoding=\"async\" data-recalc-dims=\"1\" class=\"aligncenter wp-image-13154\" src=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/04\/pasta.png?resize=670%2C511&#038;ssl=1\" alt=\"\" width=\"670\" height=\"511\" srcset=\"https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/04\/pasta.png?w=502&amp;ssl=1 502w, https:\/\/i0.wp.com\/nutritionalcoaching.com\/wp-content\/uploads\/2021\/04\/pasta.png?resize=300%2C229&amp;ssl=1 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/>Por tanto, solo en caso de personas con patolog\u00edas asociadas, se deber\u00eda de eliminar completamente el gluten. En personas sanas, muchas veces la eliminaci\u00f3n del gluten comporta disminuci\u00f3n de ingesta de fibra y granos enteros con vitaminas, por lo que no ser\u00eda recomendable. Lo que ser\u00eda ideal, es eliminar de la dieta aquellas fuentes ricas en gluten proveniente de harinas refinadas (ultraprocesados).
