El reciente informe elaborado por investigadoras de la <a href=\"https:\/\/ecodes.org\/images\/que-hacemos\/MITERD-2023\/Informe-Huella-alimentos-2024_def_05062024.pdf\">Universidad de Zaragoza y publicado por ECODES <\/a>nos da claves para entender c\u00f3mo podemos comer de forma saludable y, al mismo tiempo, sostenible.<\/p>\n<p style=\"font-weight: 400;\">El estudio se centra en analizar <strong>la huella de carbono de los alimentos incluidos en las gu\u00edas alimentarias espa\u00f1olas<\/strong>. Esta huella mide las emisiones de gases de efecto invernadero que se generan desde la producci\u00f3n hasta la distribuci\u00f3n del alimento, expresadas en kilogramos de CO\u2082 equivalente por kilogramo de alimento.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"font-weight: 400;\"><strong>Uno de los hallazgos m\u00e1s destacados es que no todos los alimentos tienen el mismo impacto medioambiental, aunque pertenezcan al mismo grupo nutricional.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li style=\"font-weight: 400;\">Dentro del grupo de <strong>cereales y derivados<\/strong>, el arroz tiene una huella de carbono significativamente mayor que otros cereales como el mijo o el trigo, debido a su cultivo en campos inundados, lo cual genera metano, un potente gas de efecto invernadero.<\/li>\n<li style=\"font-weight: 400;\">Las <strong>frutas y hortalizas<\/strong>, por su parte, presentan en general una baja huella de carbono, especialmente si se consumen frescas, de temporada y locales. Sin embargo, su impacto aumenta considerablemente cuando provienen de invernaderos o son importadas de otros pa\u00edses. As\u00ed, elegir productos de cercan\u00eda no solo es mejor para el sabor, tambi\u00e9n lo es para el planeta.<\/li>\n<li style=\"font-weight: 400;\">El grupo de <strong>alimentos proteicos de origen animal<\/strong>, como carnes y derivados, es el que m\u00e1s contribuye al cambio clim\u00e1tico. La carne de vacuno y cordero encabezan la lista de alimentos con mayor impacto ambiental.<\/li>\n<li style=\"font-weight: 400;\">En cambio, las <strong>prote\u00ednas vegetales<\/strong> como las legumbres ofrecen una alternativa nutritiva con un coste medioambiental mucho menor.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p style=\"font-weight: 400;\">Otro dato interesante es que la transformaci\u00f3n de los alimentos tambi\u00e9n influye en su huella de carbono.
